7. Breakfast muffins Fat Burning Index = 1.63,
With a pat of butter each, 2.11
1/2 c soy flour
1/2 c nut flour
1 c wheat bran
4 ts baking powder
1/4 ts salt
1 c heavy creams
1/2 c olive oil
4 eggs
8 oz cream cheese
1/2 c shredded cheddar
4 sl bacon; cooked
Mix flours, baking powder and salt. Mix creams, oil
and 2 eggs; stir into dry ingredients. Fill 1/2 each
muffin cups with the mixture.
For topping, beat cream cheese with remaining eggs.
Stir in cheddar and salt. Crumble and stir in the
bacon. Spoon 2 Tbs of mixture on top of each muffin.
Bake 15 to 20 minutes at 425 F.
