9. Salmon omelette Fat Burning Index = 1.78

10 oz. Canned pink Alaska salmon; flaked
4 Eggs
1/2 c Sour cream
2Tbs chopped tarragon, dill, etc.
Salt and white pepper
2 pats Butter

Beat together the eggs, cream, and herbs. Season. Melt the butter. Pour in the eggs and cook over a moderate heat until almost set. Pre-heat a grill. Arrange the salmon over the omelette. Place the pan under the grill until omelette is completely set.
